Our Thanksgiving meal is undergoing a wrinkle this year. My granddaughter, who is still breastfeeding, cannot tolerate any cows milk, even indirectly. That put my daughter on a nondairy diet. So no real butter or my usual buttermilk brine soak for the bird. We're having to check out the vegan section at the grocery store for alternatives. But while the bird fresh from the oil is delish, I have found any leftover fried turkey to taste like asshole. So eat all you can while it's hot then don't bother with leftovers. We're good for about a day or so with bird leftovers. But after that, any leftovers if any, go into a stock pot along with the bones/carcass and various spices, carrots, celery, onions and the like, and the whole thing gets cooked down into stock. That gets strained and goes in the freezer for some good meals later on. |
