I belong to several RV groups on FB.  LOT of people in TX learning some hard lessons on winterizing and what freezing can do to water lines and water heaters.  Hate it for them.  Better stock up on pex connectors and tubing.

I drained all my water lines via the low point drain and left all the valves cracked. However I didn't drain the water heater and the fresh water tank is 1/3 full.

Dam, I just saw this.  I would definitely drain the heater.   I keep my fresh water tank drained just to control bacterial growth.  Just 1/3 full, you'll probably be ok on expansion, but if it was me, I'd drain it.  Opening your low point trains should protect your lines,  there may be some water collect in the low points, but pex can give and that's usually what they plumb campers with.  I bought a cheap garden sprayer from Harbor Freight and put a valve and hose fitting on it.  I can pump it up and blow the lines clear with it.  I also use it to pump in antifreeze, but its kind of a belt and suspenders thing.  A lot of people do fine just blowing out their lines.
