Fareway had a sale on some of the biggest center cut chops I've ever seen in the state of Iowa! What's best way to cook them? I'm thinking about doing them the way I do my filet mignons...pan fry/baste for a few minutes with garlic butter/spices, 2 minutes per side then throw in 400 degree oven for finish. I found a recipe that calls for doing a salt water brine, never done that, I may try.
