BTW, I quit buying brown sugar ... too expensive and tired of it hardening up.
I make my own - add a teaspoon of molasses to a cup of white sugar and mix.
Might make some later and make the bourbon dogs, prolly use brats though.

I've been on a Tex-Mex kick lately with chili and enchiladas.
The Piggly Wiggly near me has a lot of Hispanics shoppers so they keep a ton of fresh and dried peppers in stock so I'm used to dicing a bunch up and sauteeing them up with onions and garlic.

I'll check out that cream cheese brick recipe when I get the chance Augie, I need something new!

Gave the smoked cream cheese bricks  a go!  One brick I did with Big Wills Rib Rub, another with Cinnamon sugar.  Both were good!  I'm gonna continue experimenting with it!![Image: a645d3fa8a3b227dfbbb36f34cb87e2e.jpg][Image: d2962f34404519583c6b065df51b0bf3.jpg]

Those will be superior to the pita chips! Pita are just too flavorless imho. Yesterday I used some of my leftover smoked cream cheese and had it with some crackers, cold smoked salmon, and tomatoes with everything bagel seasoning on them. Killer lunch. I had it again today!! Post a few pics if you can, I'd love to see your results!!

It's probably common sense, which I lack occasionally, but don't let the kids, or yourself, dig into the cream cheese until it has a little time to cool down!

I didn’t get pictures, but the result was fantastic. I actually crafted a “trough” out of heavy duty foil so that two blocks would go in longways. It made for something that could go right from smoker to serving table, and folks could use a spreader to grab it from the end to put it on a plate or a cracker.

Good stuff, man. Thanks for the tip.
